Announcing: The Little Bird Deli

Country star Trisha Yearwood once said, “What’s meant to be will always find a way.” This sentiment perfectly captures the journey of Little Bird Commissary Kitchen’s collaboration with Colorado Mountain College. Discussions to open a grab-and-go kitchen at the Edwards campus began in 2019.


Amidst the pandemic, owners Anne and Scott Pasquale operated their own cafe in Gypsum, DJ’s + Dahlias Cafe, until its closure in 2022. They then focused on building a commissary kitchen, a shared-use commercial space for food trucks, private chefs, and caterers. Their commercial kitchen is also home to their non-profit, dedicated to tackling the growing food insecurity issues in Eagle County.


When CMC issued a Request for Proposals for a new campus cafe in the summer of 2023, Anne and Scott knew they had to seize the opportunity—and they won the bid!


The Little Bird Kitchen and Deli will officially open its doors on August 10, welcoming students, staff, faculty, and the community. The menu features an array of grab-and-go sandwiches, soups, salads, fresh cold-press juices, coffee, lattes, cappuccinos, and even soft-serve ice cream. The Pasquales are committed to listening to feedback and adjusting the menu as needed.


“We’re planning on being both healthy and affordable,” Anne said. “We want to provide brain food. Everything we offer will be wholesome, tasty, affordable, fun, and engaging. We’ll have a selection of vegan offerings, and everything will be filling and delicious.”


Initially, the hours will be 9am to 6pm on weekdays, but they’re flexible and ready to adapt based on demand. The price point? Always $10 and under. Besides the on-campus deli, they will also offer catering for meetings held at CMC.


They’re excited about potentially partnering with The Community Market to offer a meal plan for students. This plan would provide one meal per day, Monday through Friday, for a low monthly fee. “We’re cognizant of food insecurity in the valley and want to help combat that,” Anne said. “We aim to provide affordable food that is healthy, filling, and made from scratch.”


Additionally, some menu items will support their non-profit, Little Bird Creative Community, with all proceeds benefiting The Community Market. “We’re excited to grow this venture and provide food for everybody!” Anne said.
